Highlights of the Week #3

Purely Elizabeth Breakfasts

When the brand Purely Elizabeth announced their newest product launches, I had to place an order! I’m just a teeny bit obsessed with their products. πŸ˜‰

The announcement included new bars as well as vibrant oat cups! The oats interested me more than the bars, so I ordered two cups of the Raspberry Pitaya and two cups of the Blueberry Lemon. Since I was already on the website and placing an order, I figured I might as well get a few other products as well! I got two Granola & Puffs cereals and an Apple Cinnamon oatmeal cup.

For two of my breakfasts this week, I tried the Blueberry Lemon oats (which contains blue spirulina powder, an antioxidant-rich plant) and made a parfait using the Pumpkin Cinnamon cereal.

I topped the oats with the granola that comes with the cup, fresh blueberries, and raw almond butter! The oats are supposed to be a lot more blue and a lot less purple, buuut I kinda stirred them too much, so the dried blueberries overpowered the spirulina. Oh well, they’re still pretty, and they were just as delish!

I topped the granola and puffs with organic grass fed blackberry yogurt and fresh blues. I mixed it all up and it was a nice and crunchy breaky! The yogurt is actually made by a local Pittsburgh company called Naturi. It’s super goooood.

Mini Waffle Maker

My mom showed me this mini waffle maker on Amazon, and of course, I wanted it immediately. I love waffles, and I love mini things. This is an add-on item, so you can only order it if you have something else in your cart along with it. I actually didn’t know this was a thing. I didn’t need to order anything else at that time, so when my mom placed her next Amazon order, she included it in the cart. It was waiting for me at the house when I got back to VB. 😊

It’s seriously so cute and it makes Eggo-sized waffles. This means that my single serve waffle recipes will now make multiple mini waffles, instead of just one big waffle. This is really exciting to me, lol.

New Vegan Recipe-Blog Discovery

I was browsing the Internet and I honestly forget how I got to it, but I came across a YouTube video by Caitlin Shoemaker of From My Bowl. The video shows the process of making two tofu recipes and I was totally intrigued. 😍 I love tofu and when I find new recipes that 1. look incredible and 2. look totally doable, I’m such a fan. And those two things are very much the case for the tofu recipes in that video!

I’m making the orange tofu to have for lunches in the coming week. Of course, I’ll report back with the results. πŸ˜‰

But anyways, I bookmarked sooo many of Caitlin’s recipes to try. I love stumbling across such blog gems!! I’m super excited to incorporate her recipes into my weekly meal plans.

Fresh Nails

After years of picking and biting my nails, I finally quit the habit a while ago, and I can thank the ‘dip powder’ method for being the biggest solution! I’ve been getting it done since October and I love it because it helps my nails feel strong (mine are super thin/bendy on their own) and the color lasts super long for me – much longer than gel!

I was super overdue for a new color, as I’ve been rocking a Valentine’s Day red since before Feb. 14th, lol. When I went in, Tara (my go-to girl!) showed me the color options as usual, including some new ones! A light sparkly pink caught my eye and I was sold almost immediately. I just love glitter + pinks. 😍

I’m obsessed, lol.

Slow Flow Class

As much as I adore and am obsessed with Burn Boot Camp, my muscles definitely feel tight most of the time as a result of the intense workouts 6 days a week. I do try to stretch at home, but sometimes I just don’t feel like it, even though I know I should.

A couple of years ago, I was going to yoga on a weekly basis, but the studio I went to made some changes that I didn’t necessarily like, so I stopped going. I’ve tried a few other studios here and there, but I never really got back into the schedule of going.

Very tight muscles from Burn + my ankylosing spondylitis = it was long overdue to take a yoga class.

I researched studios in VB (since I’m back now for a couple of weeks) and found one pretty close to Sandbridge. It’s called Shine, and when I saw they had a slow flow on the schedule (which is specifically helpful and beneficial for tight muscles), I knew it was the ideal class for me to take!

I took the class yesterday morning and it was sooo great! It was exactly what my body needed, and my muscles felt super relaxed and pain/tightness-free the rest of the day.
